Love a good herb harvest! Excited to make some seasonings from our garden.

If you have herbs - sage, basil, oregano, thyme - you can also dry them out to make spices you can use all year around.

Our favorite thing to make from our garden is marinara.

Chop tomatoes, onion, garlic and herbs and place in a baking dish. Add olive oil, a touch of salt, Italian seasonings & something a little sweet (our go to is a local honey).

Roast low and slow - about an hour at 350 degrees. Once everything looks caramelized and smells amazing - let it cool a little (10-15 minutes).

Next up - blending! We use our normal blender and pour everything into it before running it until smooth - taste and add anything else you feel is missing!

Store in the fridge and use within 3-5 days or store it in freezer bags for up to 6 months.

Enjoy!

Thankful for a great harvest this week!

Checked on our carrots progress, cut some fresh flowers to bring inside, herbs were collected and dried and still prepping the rest for this week.

Gave some old plates and coffee mugs a second life as bird feeders. Special shout out to @thrifteaindy for the assist!

We can confirm the bird feeders survived the storms so far but the bird seed didn’t….

Drying herbs now so we can make delicious spices in the future.

We always try to keep it simple and if herbs can be hung to dry - that is exactly what we do. We have some oregano, rosemary and thyme drying now.

One of my favorite garden features are our built in compost pots in each garden bed. I love the look of Terra cotta planters & love them even more as an in garden bed compost solution.

It is so amazing to see how quickly our Red Wiggler worms help break up our food scraps and provide us with nutrient rich soil!
